A way to delight your taste buds with a plant-based protein dish is with one of the simplest and definitely one of the tastiest possibilities, namely, a chickpea burger.

These legumes, rich in protein and also economical, are an excellent alternative for both those who follow a vegetarian diet, and for those who simply want to enjoy a satisfying meal without consuming meat products.

In this case, in addition to 2 cups (500 grams) of chickpeas, we will need 2 eggs, 2 cloves of garlic, parsley, breadcrumbs or oatmeal flour, salt, pepper and - optional - 2 tablespoons of mustard and 2 tablespoons of flax seeds. 

Preparing this recipe is actually very simple!

As in the case of preparing hummus, another very famous dish based on chickpeas, you start by soaking the chick peas overnight and then boiling them.

Alternatively, you can skip these steps by purchasing chickpeas already boiled in cans or jars, which is less natural but infinitely more convenient. 

With the help of a mixer, mix the chickpeas (cold); add the two eggs and mix them until you obtain a homogeneous mixture.

Then add minced garlic and parsley, and then all the other ingredients; measure and add the breadcrumbs (or oatmeal flour) so as to obtain a mouldable but not excessively dry mixture. 

After mixing all the ingredients, create the classic burgers with your hands and place them in a preheated oven at 392°F (200°C) after having brushed them lightly with a little extra virgin olive oil. 

Cook for 20 minutes, turning them over halfway through cooking and ... enjoy your meal!
